Mediterranean Calzones

Baked feta in crispy phyllo — a savory, crowd-pleasing appetizer perfect for any gathering.
Ingredients:
2 blocks of Feta cheese (about 1 ounce each, preferably in brine)
1 large egg (I went with Happy Eggs)
2 tablespoons melted butter (mine was from Farm to People)
2 tablespoons olive oil (I like Chosen Foods)
4 sheets of room-temperature phyllo dough (I used Fill Factory brand)
Sesame seeds (for topping)
Optional: sliced tomatoes, green olives, honey
Directions:
Preheat the oven to 425°F (220°C).
Turn each block of Feta on its side and cut in half, giving you four pieces in total.
In a small bowl, whisk together the egg, melted butter, and olive oil until smooth.
Lay two sheets of phyllo dough on your countertop. Lightly brush the egg mixture over the dough. It doesn’t need to be perfect, but make sure it’s evenly spread across the surface.
Place two pieces of Feta side by side on the prepared phyllo dough.
Fold the top side of the dough over the Feta and brush the folded part with the egg mixture. Fold both lengthwise sides over the Feta and the brushed dough, making sure the edges are evenly folded. Brush the folded edges with more egg mixture.
Starting from the top, fold the dough over the Feta to form a square packet. Repeat with the remaining phyllo sheets and Feta pieces. Transfer the packets to a non-stick baking sheet.
Brush the tops of the packets with the egg mixture and sprinkle sesame seeds on top. Bake in the preheated oven for 20 to 25 minutes or until golden brown.
Cut into small pieces or serve halved. Garnish with sliced tomatoes, green olives, and/or a drizzle of honey (such as hot honey).
